Vinification | The harvest is entirely selected and destemmed. The grapes undergo a cold pre-fermention maceration during three days followed by a maceration at a temperature from 20° to 28°C during twenty two days.
All the grapes (Grenache, Syrah, Carignan) are hand-picked at fully maturity but only a part of them is matured in 12 years old new barrels. |

Wine-tasting | This wine shows a dark ruby robe with purple highlights. The first reveals aromas of candied blackberries. The end of mouth is pleasant and full, tannins are melted with a retro olfaction of grey pepper. |
